Monthly Recipe: Miso Walnut Brownies

I was feeling in the mood for something sweet this month, and decided to search online for cakes using Japanese ingredients. I came across this Sachie’s Kitchen recipe for Miso Walnut Brownies, which looked really good, and then found this blog where someone actually tried the recipe. Miso Walnut Brownies

Ingredients

  • 1 & 1/4 cups self-raising flour
  • 125g butter, softened
  • 1 cup brown sugar
  • 1 tbsp miso
  • 4 tbsp natural yoghurt
  • 1 cup walnuts, coarsely crushed (plus some larger pieces for decoration)
  • 1 egg

Cooking: Miso Walnut Brownies

Method

Pre-heat oven to 180 degrees.

Combine miso and 1 tbsp yoghurt in a small bowl and set aside.

In a large bowl, mix the butter and brown sugar until smooth.

Add the miso-yoghurt mix and the walnuts to the large bowl and mix well.

Sift the flour into the mixture. Add an egg and three more tbsp of yoghurt to make a wet batter.

Pour the mixture into a cake tin and sprinkle with walnut pieces.

Bake for 20 minutes.

Remove from the oven and rest until cool.

Cut into squares and serve.

I have to say, this is one of the yummiest cakes I’ve baked in a long time! I was a little bit apprehensive about using miso in a sweet dish, but it totally works! I suspect it also makes these brownies a little bit healthier than traditional chocolate brownies, although they do still contain sugar of course. Have you ever used miso in a sweet dish?   1. These look great – I really like salted chocolate and caramel – does the miso provide that sort of salty twang? Or does the sugar overpower the immediate miso taste and just add more depth of flavour. I’m definitely gonna give this recipe a go sometime!
