Monthly Recipe: Matcha & White Chocolate Sablé

With the Great British Bake Off currently in full swing on BBC1 I’ve been quite inspired to bake, so a couple of weeks ago I decided to have a go at some Japanese-themed biscuits. I found this great recipe for matcha (green tea) and white chocolate sablé and thought I’d give it a go. I’ve never been that successful with biscuits in the past, but sablé has become my new favourite type of cookie as it’s really easy to make and the results were quite yummy. I actually took the biscuits in to my office to get some feedback, and everyone loved them! According to Wikipedia, sablé “is a French round shortbread cookie, originates in Caen, in the province of Lower Normandy”. The biscuits were quite crumbly and shortbready, and one of my favourite things I’ve made!

Matcha & White Chocolate Sablé

Ingredients

  • 240g plain flour
  • 15g matcha powder
  • 150g unsalted butter, softened
  • 130g icing sugar
  • pinch of salt
  • 2 egg yolks
  • a handful of white chocolate chips

Method

First, cream the butter and sugar until soft and light.

Add in the yolks and beat well.

Gradually sift in the flour and matcha powder. Fold in the chocolate chips.

Note: Choose a good matcha powder! Personally, although it’s expensive, I like the one pictured below. You can buy it from the Japan Centre here in the UK.

Marukyu Koyamaen Aoarashi Stone Ground Matcha Green Tea

Shape the dough into a log.

Wrap in cling film and rest in the fridge over night.

The next day, preheat the oven to 150C. Cut the cookies into slices approximately 7mm thick using a sharp knife.

Bake for 20 – 25 minutes on a paper-lined baking tray.

  1. Will have to make that myself – i love using green tea in recipies 🙂 – I’ve used it to make a green tea and coconut battenburg (GBB recipie from Mary Berry). Can’t make it here in NZ as Marzipan is extortionately expensive :/
