Monthly Recipe: Matcha Pound Cake

For this month’s recipe I decided to bake something quick and simple that I found on the Yunomi website – matcha (green tea) pound cake. Matcha is one of my favourite flavours, and I think it will feature heavily in the recipes I try this year! This cake didn’t go as well as I had hoped, but I blame my rubbish electric oven for that. 😉

Matcha Pound Cake


  • 100g unsalted butter
  • 80g caster sugar (split into 60g and 20g)
  • 2 eggs (whites and yolks separated)
  • 100g self-raising flour
  • 1 teaspoon baking powder
  • 10g matcha powder
  • 1 tbsp milk

Spot the deliberate mistake… yes, there should be two eggs in this picture!



Preheat the oven to 180 C. In a bowl, beat the butter with an electric mixer.

When the butter is light and fluffy, add 60g of sugar and beat in 2 egg yolks.

In a separate bowl make meringue by beating 2 egg whites with an electric mixer and adding in 20g of sugar.

Stir the flour, baking powder and matcha powder into the egg and sugar mixture a little at a time.

Stir in the meringue a little at a time. Add in the milk.

Pour the mixture into a lined loaf tin.

Bake for 40 – 45 minutes.

My cake didn’t rise nearly enough, so I don’t know if it was my oven being useless, something I did wrong with the ingredients, or something else. This happens a lot with cakes I make though, so I am inclined to think it’s my oven.

Still, the colour was good, and it tastes pretty nice too!
