Man, I love cooking with matcha! I know I did a matcha recipe last month, but I couldn’t resist doing another one this month! I spent the morning Googling for matcha cheesecake recipes and happened upon this recipe for Green tea Cheesecake Swirl Brownies, which I have adapted slightly. I have to say… YUM! This is one of the best recipes I’ve done for a while! 😀
Matcha Cheesecake Swirl Brownie Bites
Ingredients for Brownie Layer
- 120g dark chocolate chips
- 113g butter
- 200g granulated sugar
- 2 large eggs, beaten
- 1 tsp vanilla
- 64g plain flour
Ingredients for Cream Cheese Layer
- 227g cream cheese (Philadelphia or similar)
- 67g granulated sugar
- 1 large egg
- 1 tbsp plain flour
- 1 tsp vanilla
- 2 tsp matcha powder
Method
Pre-heat the oven to 180 C. Grease and line a baking tin. First, the brownie later! On a medium heat, melt the butter and chocolate chips together. Keep stirring so it doesn’t burn.
Remove from the heat and stir in the sugar.
Allow to cool slightly and then stir in the beaten eggs, vanilla and flour.
Stir until the batter comes together.
Pour the batter into the tin.
Next, the cream cheese layer! In a bowl, mix together the cream cheese and sugar until smooth (I used an electric mixer to speed things up).
Add the egg, flour, vanilla and matcha powder. Mix until combined.
Pour the green batter over the brownie batter. Using a knife, swirl the two layers together.
Bake for about 30-40 minutes. When baked, leave on a wire rack to cool.
Cut into bite size pieces…
